Our entire model is built around live on-site cooking: we bring the kitchen to your venue, fire the proteins to order, finish the sauces minutes before service, and plate food that actually tastes the way it did at your tasting.

That approach works whether you are hosting an intimate 50-guest ceremony in a Riverside backyard, a 150-guest vineyard reception in Temecula, or a 300-plus celebration at a full-service Inland Empire venue. The equipment scales, the crew scales, and the standard does not move. Every wedding menu is custom-built — there is no laminated package list, because a late-summer garden wedding and a December ballroom reception should not be eating the same dinner.

Chef Alec is a classically trained chef with a background in high-volume hotel banquet kitchens and private fine-dining service. That combination matters for weddings specifically: banquet experience means we understand throughput, timing and how to get 250 hot plates on tables inside twelve minutes; private dining experience means each of those plates is composed like it belongs in a restaurant, not on a steam line.

Buffet catering is the most flexible and the most budget-efficient at higher guest counts. We build double-sided lines with chef attendants at each station so a 200-guest room clears in roughly 25 minutes rather than the hour a single-sided buffet takes. Family-style service sits between the two: platters and boards land in the center of each table and guests serve one another, which encourages conversation and works beautifully for long farm tables and rustic outdoor receptions.

Live-action stations are what most couples remember. Our taco bar, carving station, pasta station and seafood station each put a chef in front of your guests, cooking and finishing plates to order. Stations spread guests across the room instead of stacking them in one line, they double as entertainment during cocktail hour, and they let you offer real variety without inflating the per-person cost. Many of our weddings combine formats — passed appetizers and a drink station during cocktail hour, then a buffet or plated dinner once guests are seated.

Building your custom wedding menu

Menu planning starts with a conversation, not a price sheet. We ask about the season, the venue, the ceremony time, how formal the day feels, what you two actually like to eat, and where your family traditions live. From there Chef Alec drafts a proposed wedding menu — usually two or three entrée directions, a set of cocktail hour appetizers, sides that complement rather than repeat, and a plan for late-night snacks if the reception runs long.

Our range covers slow-braised beef short rib, tri-tip and prime rib carving, herb-roasted and stuffed chicken, seared salmon and other seafood, house pasta, elevated street tacos, seasonal roasted vegetables, composed salads and fresh-baked breads. Cocktail hour tends toward passed bites — ceviche spoons, bacon-wrapped dates, sliders, charcuterie and grazing boards — plus drink stations ranging from agua fresca and infused water to full bar service with bartenders.

Dietary accommodations are designed in from the start. Vegetarian, vegan, gluten-free, dairy-free and allergy-specific plates are built as complete dishes with the same care as the main entrée, not a plate of steamed vegetables handed apologetically to your aunt. Staffing, rentals and day-of coordination

Wedding catering is far more than food. We staff every event with the right ratio of chefs, servers, bartenders and a service captain who owns the timeline on the day. The captain coordinates directly with your planner, DJ and photographer so dinner service does not collide with toasts, and so you two actually get plated and fed — we always make sure the couple eats, which sounds obvious and is skipped more often than you would believe.

We coordinate rentals when you need them: china, flatware, glassware, linens, chafing equipment, serving tables and bar setups. Peak wedding season here runs May through October, and popular Saturdays book six to twelve months out.
